What is the meaning of the simanim on Rosh Hashanah?

Each food is a good sign for the year, tied to a short prayer, often based on a play on the food's name, asking Hashem for a specific bracha.

Do you make a bracha on the simanim?

Yes. For each siman you first make the appropriate bracha on the food, then say its Yehi Ratzon, then taste it. Follow your family's order.
